I tried out this recipe yesterday and it turned out great.



Ingredients:
1 1-lb Flank Steak or Sirloin Steak
1 Large Onion, sliced
2 Bell Peppers
4 Tbsp of Vegetable Oil
Salt and Pepper, to taste

For the Marinade:
½ cup of Fresh Cilantro
1/2 Jalapeno Pepper, seeded
1 tsp of Ground Cumin
1 tsp of Chili Powder
Juice of One Lime
1 Clove of Garlic, peeled
2 Scallions, trimmed
1 Tbsp of Vegetable Oil
Salt and Pepper, to taste

To serve:
Flour Tortillas
Pico Di Gallo Salsa
Guacamole
Sour Cream
Shredded Cheddar
Fresh Limes

^ Good stuff...I once went to what was billed as the original place where the fajita was born. Back in the early 90's I was working in Texas (El Paso) and we drove out to some Indian Reservation and had dinner there. It was good, but the drive out there was long. Can't remember the place's name tho. Pueblo Indians perhaps.

Throw in just a smidge of chipotle in adobo sauce...just a smidge. Too much and it sucks. Needs to be a subtle flavoring.
