Whats your go to breakfast

I got a shitty early early schedule at the hospital for the past couple weeks, and I'm really not a morning person anyway. So I had been just getting McD's on the way. But a girl I work with gave me her breakfast one day and I've been making them since then.

First fry up some bacon, not too crispy though even if you like them that way.
line the bottom of a muffin tin with some bread.
put the bacon around the side of the muffin/cupcake tin.
scoop some shredded cheese in the middle on top of the toast.
break an egg on top of that cheese.
salt and pepper that.
bake it in oven until egg is not jiggly when I shake the muffin tin.

Then just throw them in a zip lock bag in the fridge and grab a couple in the morning. 20-25 seconds in the microwave and they are delicious. I'm too lazy in the morning and just grab 2 as I walk out the door and eat them cold in the car. Still tastes pretty good, and they're extremely filling. I probably shouldn't be eating them every day, but I'm sure they're at least better than mcdonalds. And both are better than me waking up any earlier.

When I go to Jimmy's Egg or Beverly's Pancake House I usually get:

2 eggs over medium
bacon
hash browns
biscuits and gravy

Yes, it's a real place.

I think I posted this on the CFB board before, but it's still one of my favorite quick things to make -

Toast a piece of whole grain bread - I use Ezekiel Bread because it's hearty enough to not get soggy, and it's also far better for you than regular bread

Cut a clove of garlic in half and rub the cut side on the toast. The heat will open the oils from the garlic and saturate the bread. Pivotal step.

Make some fresh Sriracha mayo and spread that on the toast after rubbing the garlic clove on it. Top with sauteed spinach, a fried over-easy egg, and top with fresh finely shredded parmesan cheese. Only takes about 10 minutes to make and it's amazing.

It has been going down here. I bought a 36 count carton the other day here for under $3. A few months ago the same carton was about $5 or $6.

Soaking up the yolk with toast is a must!
Dang! I just bought an 18 pack for about four bucks! I was robbed!!



Go-to at a restaurant is Eggs Benedict or steak & eggs (medium rare steak, eggs over medium- don't like any part of the albumen to be runny). At home, bacon, eggs & potatoes unless I have a craving for pancakes.
