Ground beef. It tastes like a cheeseburger. Yum. Season the meat with taco seasoning (your own, not the store stuff because that's way too salty), and serve with a side of black beans. I also like adding tuna and broccoli and making it a cheap tuna casserole. Cut up some pepperoni or some Italian sausage, and you have a pizza casserole. Grilled chicken also works. Peas are a super easy way to get some veggies in.

Can you tell I was broke in college and grad school? Don't even get me started on ramen recipes.

I knew I was poor when I was eating ramen for breakfast. Thankfully I graduated and passed my NAPLEX.

I got a fellowship in a gov office after grad school and thought I was on easy street. NOPE. It was a mid-term election year, and they delayed the budget for months and months. The office couldn't do shit with our monies because of how that stuff works out, and I was stuck in DC without pay for 3 months. I lost weight because I couldn't afford to eat more than 1 full meal a day. I was actually rationing my ramen, and mac and cheese was a weekend treat. Never again.
