I had made a large patch of every thing you had list above, (minus the cayenne and mustard) had a little left this morning and I took that and mixed coffee into it. I got two bacon wrapped meatloafs chillin in the fridge with this rub, gonna smoke them up today, let you know how that coffee taste goes....

I will, the smell is pretty damn good, nothing like garlic mixed with coffee grounds waffling through the house...
I just put the ribs in the smoker. I'm glad it's outside.

Having your house fill with the smell of delicious food and not being able to eat the stuff for hours is torture!

I know, I do that to my oldest, his window is right off the patio and I purposely open his window while I have the smoker going, poor bastard doesn't stand a chance, and every 20 minutes I get the famous question, " Is it done yet?"

I've always used Alton Brown's 8-3-1-1 recipe. then modified based on what i felt like.
it's (parts can be whatever, 1 cup or 1 tablespoon just depends on how much you want):
8 parts Brown Sugar
3 parts salt
1 part chili powder
1 part whatever else you want to add.

now personally i always found it a tad sweet with that much brown sugar, so I usually cut that down to 5-6 parts brown sugar. I then usually split the salt into 1 part Kosher, 1 part garlic salt, 1 part Lawry's season salt.

the 1 additional part, I'll usually use a mixture of black pepper, cumin, onion powder, paprika.

Be it said here...BEFORE applying ANY rib rub...please pull that skin membrane OFF on the bone side of your ribs please.

Makes for a better plate of ribs in the end.

It was awesome man, give it a try. I'm thinking you can add to a rub that has a little kick and you would still get that coffee taste

Nice!

I imagine you grind the coffee pretty fine?

Yep, the wife thought I was making her coffee when I was grinding it and was hollering at me for grinding it to much, "silly woman I'm adding this to a rub" of course you are!

Cinnamon is a great rub addition. Not too much! Just a kiss really sets of a piece of pork. Your recipe looks good.

I use cinnamon in my fish rub for fish tacos.

1 Tbsp paprika
1 Tbsp cumin
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp kosher salt
1 tsp cinnamon
1 tsp red pepper flakes
1 tsp cayenne
1 1/2 tsp black pepper
1 1/2 tsp dill seed

I brush a piece of fish (I prefer mahi mahi for this) with soy sauce then let it sit for about an hour then pat it dry and rub it down with that stuff. Great taco fish.

I always want to add a pinch of cinnamon to my pork rubs and never have, but after seeing you've used it I'm gonna give it a shot...

Cardamom is a nice touch too, goes real well with pork. Just a dab'll do ya though.

Sometimes I'll sprinkle a little of that in to mix it up.
