The heat from the burger keeps the cheese melty longer as opposed to coagulating a bit as it cools when it's on top.

I like to put a little slab of herb butter in the middle of mine.

That actually sounds really good.

Did stuffed burgers on the traeger for the 4th and they came out great.

80/20 beef, Little chopped mushrooms, some vidalia onions, and some american cheese (used a wine glass to cut a couple round slices for each burger). Made them about half lb burgers by making two patties for each and pressing them pretty thin, then just put the stuff in the middle and pinched them together around the edges. Threw on a little garlic salt and a little worchester sauce. Smoked them for an hour, then turned up the heat and cooked them up and perfect.

I've never stuffed one with cheese but after seeing that picture, I can totally see how it is better than putting it on top. God damn that looks great. Going to do a home made one this week.

It's actually really good stuffing the cheese.
I've taken it a step further to throw some shredded cheddar in with my ground beef and sausage ( I mix them) and it blends really well in the burger

Poke it after you flip it so the steam has an easy out, otherwise it'll want to blow a seam and all your cheese will run out with it.
