Softens them and makes them addictive as hell. Not sure about the nutrients. You add salt while boiling.
Also makes them moist as they absorb the water.

They don't sell these in grocery stores up there?

They be purty good. Not as good as homemade, but they'll pass in a pinch. The same company sets up little stands that cook them fresh everyday in gas stations and grocery stores en sech. They are even better.
