Was are your favorites? Favorite to nosh by itself? With Beer/wine/booze? On top of pasta? On pizza(besides the obvious fresh/not fresh Mozzarella)? etc.....

By itself:
Tillamook Cheese Curds (squeaky cheese)... And only Tillamook. The rest are f*ckin pretenders! I can eat these until I'm ill.

With booze:
Gouda or Blue Cheese

On pizza or pasta (besides Mozz):
Parmesan, Feta, Gorgonzola or anything smoked (gouda, cheddar, etc). There really isn't a wrong cheese for Italian foods lol.

Sandwiches:
Habanero Pepper Jack, Swiss, Provolone or Colby Jack.

I don't even know what that is, but I already know I want to eat it.

I probably use 1/2-1 tbsp of cayenne, but this is the basic recipe

Basic Pimiento Cheese Recipe
Ingredients
1 1/2 cups mayonnaise
1 (4-oz.) jar diced pimiento, drained
1 tsp. Worcestershire sauce
1 tsp. finely grated onion
1/4 tsp. ground red pepper
1 (8-oz.) block extra-sharp Cheddar cheese, finely shredded
1 (8-oz.) block sharp Cheddar cheese, shredded

Stir together first 5 ingredients in a large bowl; stir in cheese. Store in refrigerator up to 1 week.

Cheddar, from Cabot Vermont. The artisan flavors are spectacular.
On or in anything that calls for cheese except pizza.

In combination with other cheeses depending on the carb and meat that is there to carry the cheese concoction to the mouth.

Cabot's extra sharp white cheddar is freaking awesome.

is it a soft white melty cheese? If so, it could be a Chihuahua cheese or Queso Chihuahua. If its crumbly it could be a Cotija cheese

Is the Cotija the stuff they put on the black beans?
