That is Saban just bullshitting to make himself look better.

"I decided right then when that happened that we don’t have a quarterback in the NFL, we’re not going to win."

Of course "right there and then" actually means a full season later after he coached his team to a 6-10 record and after multiple players tried to fight him because he was such an ass.

Saban is just another college head coach that simply can't get it done at the highest level because of major flaws in his coaching system and style. Saban is a GREAT recruiter. He is NOT a great head coach. And that same thing is true of most great college coaches. Coaching not surprisingly is a hell of a lot easier when you have a vastly more talented team.
