I just made awesome pancakes!!

I love eating pancakes on the weekends.......dunno y

But i added some cinamon and some vanilla extract......and yummmm

Mmmmmmm..... A little splash of vanilla is always good in pancakes.

2 cups pancake mix
Lemon yogurt the individual size
1 cup blueberries
2 cups water

Throw that in the kitchen aid mixer then laddle them out 2 by 2 on the griddle.

Makes 6 greennickle size pancakes
Strawberries on top with butter and maple syrup

Just made some with mashed up oats, bananas eggs, and peanut butter protein powder........not bad, the banana mashed up in it adds a nice touch...

So tonight i wanted peanut butter pancakes i have pb2(powdered peanut butter)

I mixed pre made pancake mix,(i know yuck), with egg whites, and water.......added in a few tablespoons of the peanut butter powder........cooked

I poured out some syrup mixed a few tablespoons of pb2 in there..........

Delicious

The syrup with the peanut butter was unreal.......the pancakes mehh, but wiht the syrup awesome

Syrup right in the batter leaves more surface area for PB to melt on. Mini Chocalate chips in there too is even better.

Yep. Maybe a quarter cup of Syrup or so. One of the most important things I learned in college was syrup in the batter.

A good little trick is add a couple Tbsps of Myers dark rum to the batter. Also, leave the batter a little lumpy. Mixing until the batter is smooth makes rubbery cakes.
