wish i could make a good hollandaise

"Quick and easy hollandaise sauce. Makes enough for 2 servings of eggs benedict or asparagus. I've tried several ways to make hollandaise sauce; this method works every time and is very quick. My kids love it. I put poached egg on toast or biscuit and top with sauce. I also add crumbled sausage with jalapeño.

Directions
  1. Beat egg yolks, lemon juice, salt, and cayenne pepper together in a microwave-safe bowl until smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
  2. Heat in microwave for 15 to 20 seconds; whisk.

McCormick, or Knorr...couple others are alright.

Hollandaise is about the only packaged "gravy" I do. Once in a blue moon, I'll make real hollandaise...I have a pretty good diner-style restaurant within walking distance, with great homemade benedict, so mostly I'll just hit that if I'm craving it, but we always have a few of those packages laying around, cuz that shit would make a turd taste good.
