Level after pitch. Slightly above 5 gallons, but with the extra cup of DME with the starter, the SG should be close to what the kit called for (1.064-1.068). Closing up and cleaning up. Will take a gravity reading in about 15 as I left my hydrometer at the house.

looks like a productive weekend. I think i'll be cracking my first Australian Sparkling Ale tonight to see how it turned out. Hopbursted IIPA is in its second week in the primary.

Have you always poured the wort onto ice? I've always read and heard that this is not generally recommended, in the chance that something that might produce off flavors may be in the ice

I have for the last dozen or so and haven't had a problem with it. I'm sure there may be some that have had an issue, but I'm guessing it's mainly from using ice they would get out of their own fridge using their tap water versus store bought bags. :noidea:

Before I used ice, I would just cover the fermenter with the lid and wait forever it seemed until it got down to temperature since I don't have a wort chiller. Even trying to put the kettle in ice water in the sink would take a lot longer and I'm already spending around 3 hours. May decide to invest in a chiller if I ever have an issue, but so far, nothing my average taste buds can tell a difference.

Let me know how the Hopbursted IPA goes. What was your addition schedule for it?

I would highly recommend the wort chiller. Before I got my 8gal brew kettle, when I was doing stove-top extract brews, I didn't have a wort chiller and would do the ice batch thing, then add cold water in the carboy to level it out....wort chiller has been a great investment (especially since I have a well at my house, if I was using city water, it might boost the water bill)

I didn't realize til I got started, northernbrewer shorted me 2oz of Cluster....
was supposed to be
2oz Cluster @60
2oz Cluster @30
3oz Hopburst Blend @15
3oz Blend @10
3oz Blend @5
3oz Blend @0

Instead I went with 1.5 oz Cluster @ 60 and .5 @ 30

The hopburst blend is:
3oz Cascade
3oz Crystal
3oz EK Goldings
3oz Warrior

I'll look into chillers if I can find one for the right price at the right time when I'm ordering again.

Looks like that will be an aroma monster. May look into it myself. The NB Furious clone has 12.5 oz of hops, but 8 are dry hopped. I could only imagine doing a hopburst version along with dry hopping and how much malt would be needed to keep it halfway balanced.

it smells damn delicious so far, going into the secondary next weekend.

I emailed NB just to let them know of their mistake on the hops, wasn't looking to get anything out if, and wasn't really upset or anything but they replied back, apologized and gave me a $10 credit on my next order. Not the first great experience I've had with their customer service either

check around on amazon en sech for a chiller too, I think I got mine off there for a good deal cheaper than I could find at the homebrew shops' sites

Will do.

I know I could make one cheaper than buying by just getting about 30-50 feet of copper tubing (depending on how many coils I want) and the right fittings, but I'm just lazy, haha.
