I have this cinnamon honey butter sauce I make at home for the wife that we put on any light white fish. It's definitely not something to put on Escolar or Salmon. I ran it as a special at the place I worked in my 20's and it sold out that night. My chef wanted to put it on the menu and I said no.
My favorite is a Marsala Sauce I make with Lombardo Marsala that is reduced to a syrup with shallots. Then you add tons of salted butter piece by piece on heat but you have to keep whisking the whole time or the butter will break. Add some dried porcini mushrooms and black pepper and its the best Marsala Sauce. Carrabbas Marsala sauce is made the same way only they add precooked button mushrooms and I cant remember what else.
