All those recipes look pretty good....

Try adding a little cocoa powder and brown sugar to the Chili to give it a sweet spicy taste. Also never forget the cumin spice with some beef broth. Puts it over the top.

2 lbs beef
1 lb ground pork
3-4 cups stock (chicken or beef)
2 medium tomatoes (1 large)
1 large onion
1 tablespoons cummin
2 teaspoons corriander
1 teaspoon paprika
2 bellpeppers
3 jalapenos
3 serranos
1 poblanos
4 habaneros
1 teaspoon ghost chilli powder
8 cloves of garlic
Salt and pepper to taste
1 can of coke or 1 can of beer (darker the better)
1 bag of kidney beans

Let kidney beans soak over night.

take all the veggies except the onion and roast them in the oven at 350 for 30 minutes.

Sautee the onions. Brown the meet. Put in crock pot. Pour in stock. Put in spices.

Take roasted veggies out of oven and cut the stems off. DO NOT TAKE THE SEEDS OUT!!! Put in blender and puree them. Add to crock pot. Cook on low for 5 hours. Add beans and cook for another 3-4 hours.

I usually end up putting other things in it, but this is the basic recipe I follow. It's hot though.

The modifications that I made were (1) to discard about a three-fourths of the seeds from the roasted peppers and (2) to substitute conventional off-the-shelf grocery store chili powder for ghost chili powder. Turned out a bit milder than I most prefer, but palatable for folks who don't like extremely hot food.

Next time I make it I'm going to stir in a couple of tablespoons of flour when I saute the onions, since I think that the broth would be better if it were a bit thicker.

Awesome. Glad you enjoyed it. After about 4 hours of cooking I leave the lid of the crock pot slightly open and let some of the water evaporate and that makes the chili pretty thick. Also, one teaspoon of chili powder won't do much for you. Ghost Chili Powder if strong as hell. I'd probably put about 3 tablespoons of it in their or use about a 1 tablespoon of cayenne pepper.

If you've got the time and inclination, people love this shit when I make it:


2 pounds chuck, cut into ¾” cubes
1 pound pork shoulder, cut into ¾” cubes
salt & freshly ground black pepper
¼ pound Suet
1 cup flour
2 tsp chili powder
2 medium onions, chopped
6 cloves garlic, minced
1½ cups beef broth
1½ cups chicken broth
1 cup beer (Samuel Smith’s Nut Brown Ale or similar)
2 dried ancho chiles
2 dried red New Mexican chiles
1 dried chipotle chile
2 dried pasilla chiles
1½ tbs cumin seeds (can substitute 1 tbs ground cumin)
1 tbs oregano
1 eight-ounce can tomato sauce
3 cans light red kidney beans
1 tsp sugar
1 jalapeño chile, stem and seeds removed, minced
Rubber Gloves

  1. Preheat oven to 350ºf.

  2. Season the meat with salt and pepper.

  3. Melt, as needed, suet in heavy bottom skillet, bit by bit.

  4. In a Ziploc bag, shake half the beef in flour and chili powder, shaking off any excess and brown well in rendered fat and remove to a platter with a slotted spoon.

  5. Repeat steps 3 and 4 with remaining beef, then the pork.

  6. Put onions and garlic in a large stockpot and sauté in oil until soft.

  7. Add the chicken broth, beef broth and beer to the pot and bring to a boil.

  8. Put meat in the pot and simmer gently, covered for 45 minutes.

  9. While simmering the meat, toast the dried chilies in the oven for 5 minutes until puffed and fragrant.

  10. Using rubber gloves, remove stems and seeds and break up the chilies into coarse pieces.

  11. Put chilies in a bowl, pour boiling water over them and let them soak for 15 minutes.

  12. Puree them in a blender with about ¼ cup of the soaking water, enough to form a smooth paste.

  13. Toast cumin seeds in a heavy skillet over medium-low heat, stirring periodically until fragrant, then grind (if you don’t have a mortar & pestle we suggest you get one – if that’s not an option, we suggest you substitute the ground cumin)

  14. Add chile paste, cumin, oregano, tomato sauce and sugar to the meat mixture and simmer gently for an additional 1¼ hours, partially covered stirring and scraping the bottom of the pot periodically.

  15. Add the kidney beans and jalapeño.

  16. Add salt as needed and cook for another ½ hour, partially covered.

If you are looking for something that is spicy but not hot, I've made this recipe and found it to be pretty dang good.

Chipotle, Beef, and Bean Chili Recipe - CHOW

That looks good, probably reduce the onions by 1/2

Simple but effective chili. I take this stuff everywhere and people love it.

1.5lbs hamburger
1 onion (diced)
28oz can of red kidney beans (don't use unsalted; they are flavorless)
14oz can of tomato sauce
14oz can of tomato paste
1/3 cup of white vinegar
4-8tbsp of chili powder
1-2 jalepeno peppers (if you want morning ass itch, then by all means add more)
10-15oz of water


fry up the beef and then add diced onions.
add every other ingredient except the water; mix and heat (medium) for 5 minutes.
add about a cup of water; then add more to get desired thickness.
cook at a very low heat for about an hour and let stand on the burner with no heat of for another hour.
reheat for 15 minutes when ready to eat.

Nothing in this recipe is exact; if it calls for 28oz and you have 30 or 26 don't sweat, just add.

edit: don't buy cheap kidney beans; they'll suck
don't forget to stir every ten minutes!

I use a 1:1 hamburger to sausage ratio. Bacon I've used a few times but no real measure. I just made some and crumbled it up.
