I need a Chili Recipe for gameday party.

2 lbs beef
1 lb ground pork
3-4 cups stock (chicken or beef)
2 medium tomatoes (1 large)
1 large onion
1 tablespoons cummin
2 teaspoons corriander
1 teaspoon paprika
2 bellpeppers
3 jalapenos
3 serranos
1 poblanos
4 habaneros
1 teaspoon ghost chilli powder
8 cloves of garlic
Salt and pepper to taste
1 can of coke or 1 can of beer (darker the better)
1 bag of kidney beans

Let kidney beans soak over night.

take all the veggies except the onion and roast them in the oven at 350 for 30 minutes.

Sautee the onions. Brown the meet. Put in crock pot. Pour in stock. Put in spices.

Take roasted veggies out of oven and cut the stems off. DO NOT TAKE THE SEEDS OUT!!! Put in blender and puree them. Add to crock pot. Cook on low for 5 hours. Add beans and cook for another 3-4 hours.

I usually end up putting other things in it, but this is the basic recipe I follow. It's hot though.

Yeah, that looks pretty dang hot. I guess I could take out some of the peppers to tone it down.
When you say 2lbs beef, do you go with plain hamburger or some sort of cubed/diced steak or brisket??

Add these spices and you will not go wrong

4 dried guajillo chiles
2 Teaspoons Ground Pequin Chili
4 dried ancho (Poblano) chiles
1 tablespoon of cumin
6 cloves of garlic

you will need to rehydrate the chiles, then food process them before adding them into the Chilli

Hamburger, but you could use cubed/diced steak or brisket. Just depends on what you prefer. I've also used shredded chicken before too.

Simple but effective chili. I take this stuff everywhere and people love it.

1.5lbs hamburger
1 onion (diced)
28oz can of red kidney beans (don't use unsalted; they are flavorless)
14oz can of tomato sauce
14oz can of tomato paste
1/3 cup of white vinegar
4-8tbsp of chili powder
1-2 jalepeno peppers (if you want morning ass itch, then by all means add more)
10-15oz of water


fry up the beef and then add diced onions.
add every other ingredient except the water; mix and heat (medium) for 5 minutes.
add about a cup of water; then add more to get desired thickness.
cook at a very low heat for about an hour and let stand on the burner with no heat of for another hour.
reheat for 15 minutes when ready to eat.

Nothing in this recipe is exact; if it calls for 28oz and you have 30 or 26 don't sweat, just add.

edit: don't buy cheap kidney beans; they'll suck
don't forget to stir every ten minutes!

I always wing it, but usually use:

1-2 Cans of diced tomatos
1 Can tomato paste
1-2 Cans beans (kidney, black, pinto - all good!)
Hamburg
Sausage
Bacon
1 big onion
1 whole garlic
2-3 peppers
1 Zuchini
1-2 Tbsp Chili powder
1 Tsp Paprika
1 Tsp Cayenne pepper
1 Tbp Cumin
1-2 Tbsp Cocoa Powder
Salt & pepper
1 bottle of stout

Saute all veggies in olive oil (add garlic at end). Fry up the meat. Mix together and simmer for a couple hours.

Then refrigerate over night! Re-heat the next day and eat with corn bread & cheddar cheese.

Just picked my first one of these and decided to make some chilli with it. Used 4 habenaros, about a 1/4 cup cayenne pepper, some green chilli powder, chipotle powder, adobo powder, ghost powder, with garden fresh tomatoes and bell peppers. I've only ate a 1/4 of a bowl and have to take a break.

I was surprised about the bacon, too...

And, purists use cubed beef - and it tastes better. But ground is a lot easier and it still tastes great (imo).

Best to go for medium heat, then add your favorite hot sauce to the bowl as needed...


Which leads to the next question: Favorite hot sauce!

When I was younger, I had a nasty collection, but lately I stick to medium-hot with flavor...

Hard to go wrong with carne asada. I use new mexico, ancho and arbol chiles. Throw in a couple habaneros Make sure you throw a beer in it too.

Just picked up 21 lbs of meat.

13 and half pound pork shoulder.
6 lbs of chuck beef
2lbs of bacon




The rest of the ingredients don't matter..:lol:
