Say four eggs, a handful of shredded cheese(mild cheddar or Colby jack usually, or Velveeta) and maybe 1/8 of a cup milk. 1/4 cup if clumsy. (I don't use measuring cups if I can help it.)

If I cook em, scrambled with a little milk + salt +pepper +butter. Then I mix with salsa when done.

But about to go out to breakfast and then hit a farmers market, so when I go out I usually get over-easy. yeah, I'm a bad ass like that :suds:

Sautee a little finely chopped vidalia onion and green pepper, a little chopped up frying ham, three eggs scrambled with about half a cup of milk and a tablespoon or so of sour cream and make yourself a denver omelet. Served with some flaxseed power bread toast.
