There are plenty of ethnic cuisines that America has doused in the thick, sweet sauce of appropriation, but perhaps none more so than Chinese food. There’s a time and place for things like sweet and sour chicken and crab rangoon, but it never feels good to be expecting a plate of mapo tofu only to get your food and realize you’ve walked into a trap set by General Tso.

i read that, funny how some of them are, well real chinese places serve this too, but if you see it, it may be a fake one!

Still waiting for authentic Mexican cuisine to hit the area I live. The Latino population exploded here about 30 years ago. Don't any of these folks have Grandma's recipes lying around or maybe even Grandma herself?

Virtually all authentic Chinese restaurants I know of have both a Chinese-American menu and a Chinese menu. That's probably a pretty good sign your food is authentic. Although the notion of one type of Chinese food is pretty bizarre, considering its size. And Chinese-American may be its own cuisine, but it is still delicious in its own rights. Diasporas often produce great variables on food and I hate the sort of shaming that many people have for "inauthentic" diaspora food, as if the only thing that is edible derives directly from the home country.

Some of the best Chineseish food I've ever had was in Peru, which has it's own version of Chinese food which is very heavy on Potato and Corn. Strongly recommended if you get the chance.
